  • 1/3 cup (110g) honey
  • 1/3 cup (60g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed (optional)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt (for mixture)
  • Flaky sea salt (for topping)

Instructions

  1. Combine the dry ingredients: In a medium mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed (if using), and a pinch of sea salt. Stir together.
  2. Add the wet ingredients: To the same bowl, add 1/2 cup peanut butter, 1/3 cup honey, and 1 teaspoon vanilla extract.
  3. Mix until combined: Stir everything together with a spatula, scraping the sides and bottom, until the peanut butter and honey coat all the oats (about 1-2 minutes).
  4. Fold in the chocolate chips: Add 1/3 cup mini chocolate chips and fold them in gently until evenly distributed.
  5. Chill the mixture (optional but helpful): If the mixture is too soft, refrigerate for 15 minutes.
  6. Roll into bites: Using a 1-tablespoon cookie scoop or tablespoon, scoop portions and roll between your palms to form balls. Wet your hands slightly if sticky. You should get about 16-18 bites.
  7. Add the finishing touch: Place the rolled bites on a baking sheet or plate and sprinkle a tiny pinch of flaky sea salt on top of each.
  8. Chill to set: Refrigerate the bites for at least 30 minutes before eating.

Notes

For best results, use well-stirred natural peanut butter. If mixture is too dry, add a teaspoon of honey or peanut butter; if too wet, add a tablespoon of oats. Wet hands prevent sticking when rolling. Bites can be stored in the refrigerator for up to 2 weeks or frozen for up to 3 months.
