  • 8 ounces cream cheese, softened (full-fat preferred)
  • 8 ounces sliced turkey breast (deli-sliced or leftover roasted turkey)
  • 1 cup finely shredded carrots
  • 1/2 cup finely chopped fresh spinach
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons finely chopped green onions (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill or Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 tablespoon mayonnaise or Greek yogurt

Instructions

  1. Finely shred the carrots using a grater and chop the spinach, red bell pepper, and green onions into very small pieces.
  2. In a large bowl, soften the cream cheese by stirring it with a spatula until smooth. Add garlic powder, dried dill or Italian seasoning, salt, and pepper. Mix well. Stir in mayonnaise or Greek yogurt if using.
  3. Fold the shredded and chopped veggies into the cream cheese mixture until evenly distributed.
  4. Lay out a tortilla flat on a clean surface. Spread about 2 to 3 tablespoons (30-45 grams) of the cream cheese-veggie mixture evenly over the tortilla, leaving a small border around the edges.
  5. Layer 2 to 3 slices (about 2 ounces or 56 grams) of turkey evenly on top of the spread.
  6. Starting from one edge, tightly roll the tortilla into a log shape. Wrap tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Remove from the fridge and unwrap. Using a sharp serrated knife, slice each roll into 1-inch (2.5 cm) thick pinwheels. Arrange on a platter or pack in containers.

Notes

Warm tortillas slightly in the microwave (10-15 seconds) if they crack while rolling. Chill roll-ups for at least 30 minutes before slicing for clean cuts. Use finely chopped veggies to keep them hidden and kid-friendly. Cream cheese should be softened for easy mixing.
