  • 6 flour tortillas, 8-inch size (soft, pliable)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked breakfast sausage or bacon, chopped (turkey sausage works too)
  • 1/2 cup diced bell peppers
  • 1/4 cup finely chopped onion
  • 1 cup frozen hash browns (optional, thawed and drained if needed)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter (for cooking veggies and eggs)
  • Salsa (optional, for serving or adding inside)
  • Fresh cilantro (optional, chopped, for a fresh burst)

Instructions

  1. Prepare your ingredients: Dice the bell peppers and onion, chop cooked sausage or bacon, and thaw hash browns if using. Set aside. (10 minutes)
  2. Cook the veggies: Heat 1 tablespoon olive oil or butter in a 10-inch skillet over medium heat. Add the onions and bell peppers, cooking until softened and fragrant, about 5 minutes. Toss in the thawed hash browns and cook an additional 3–4 minutes until they start to crisp. Season lightly with salt and pepper.
  3. Scramble the eggs: In a medium mixing bowl, whisk the eggs with a pinch of salt and pepper. Pour into the skillet with the veggies. Gently stir and cook until just set but still soft, about 3–4 minutes. Avoid overcooking to keep eggs tender.
  4. Combine fillings: Remove skillet from heat. Stir in the cooked sausage or bacon and half of the shredded cheese. Mix gently to combine evenly.
  5. Assemble burritos: Lay out a tortilla on a flat surface. Spoon about 1/2 cup of the egg mixture down the center. Sprinkle with remaining cheese and a little chopped cilantro if using. Fold the sides over the filling, then roll tightly from the bottom up.
  6. Wrap for freezing: Wrap each burrito tightly in foil or parchment paper, then place in a freezer-safe bag or container. Label with date and contents. (Makes about 6 burritos)
  7. Freeze and store: Freeze for up to 3 months. When ready to eat, unwrap and microwave on high for 2–3 minutes, turning halfway through, or bake in a preheated 350Β°F (175Β°C) oven for 15–20 minutes wrapped in foil.

Notes

Do not overstuff burritos to prevent bursting in the microwave. Warm tortillas for 10 seconds before assembling if they crack. Keep filling slightly drier to avoid sogginess after freezing. Reheat wrapped in foil in oven for best texture. Customize fillings for dietary needs.
