Ingredients

Scale
  • 1 French baguette, sliced into Β½-inch rounds (about 2024 slices)
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic, peeled
  • 810 fresh figs, stems removed and quartered
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon unsalted butter
  • ΒΌ teaspoon flaky sea salt, plus more for finishing
  • Freshly ground black pepper, to taste
  • 4 ounces goat cheese, softened to room temperature
  • 2 tablespoons fresh thyme leaves
  • Optional: ΒΌ cup toasted walnuts or pecans, roughly chopped
  • Optional: 1 tablespoon extra honey, for drizzling

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper. Slice the baguette into Β½-inch rounds and arrange in a single layer on the baking sheet.
  2. Brush both sides of each bread slice with olive oil. Sprinkle a tiny pinch of salt on each slice. Toast in the oven for 8-10 minutes, flipping halfway through, until golden and crisp.
  3. While the bread toasts, rinse and dry the figs. Remove stems and cut each fig into quarters lengthwise. Set aside.
  4. Place a small skillet over medium heat. Add the butter and let it melt completely. Once bubbling, add the honey and balsamic vinegar. Stir to combine and let simmer for about 30 seconds until slightly thickened.
  5. Add the figs to the skillet, cut-side down. Sprinkle with flaky sea salt and black pepper. Cook undisturbed for 2-3 minutes until the cut sides are deep golden. Flip gently and cook for another 2 minutes until soft and jammy. Remove from heat.
  6. Place the softened goat cheese in a small bowl. If desired, mash with a fork and stir in a teaspoon of honey or a splash of cream for extra spreadability.
  7. Rub each toasted baguette slice with the peeled garlic clove. Spread a generous layer of goat cheese on each slice (about 1 teaspoon per piece).
  8. Top each crostini with 2-3 fig quarters. Drizzle any remaining honey glaze from the skillet over the top.
  9. Sprinkle fresh thyme leaves over the crostini. If using nuts, scatter them on top. Add a final pinch of flaky sea salt and an extra drizzle of honey if desired. Serve immediately.

Notes

Toast the bread and roast the figs up to an hour ahead for easy party prep. Keep bread in an airtight container and figs at room temperature; assemble just before serving. For best results, use room temperature goat cheese and watch the bread closely to avoid burning.
