  • 1 cup granulated sugar (200g)
  • Zest of 1 large orange
  • 1/4 cup freshly squeezed orange juice (60ml)
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons lemon juice
  • 1/4 cup water (60ml)

Instructions

  1. Rinse the fresh figs gently under cold water. Remove the stems, then chop the figs into quarters (about 1-inch pieces). (10 minutes)
  2. In a large heavy-bottomed saucepan, combine chopped figs, granulated sugar, orange zest, orange juice, lemon juice, cardamom, and water. Stir to combine. (5 minutes)
  3. Place the pot over medium heat and bring the mixture to a gentle boil. Reduce heat to low and simmer uncovered, stirring occasionally to prevent sticking and burning, until figs soften and mixture thickens. (45-50 minutes)
  4. Test the jam’s consistency by placing a small spoonful on a chilled plate and running your finger through it. If it wrinkles and holds shape, it’s done; if not, simmer another 5-10 minutes. (5 minutes)
  5. Optional: For a smoother jam, use an immersion blender to pulse gently and break down larger fig pieces, leaving some texture. (2 minutes)
  6. Remove from heat and let cool for about 10 minutes. Spoon jam into sterilized glass jars, leaving 1/4 inch headspace. Seal tightly and let cool completely before refrigerating. (10 minutes)

Notes

Skim off foam during cooking for clearer jam. Stir gently every 5 minutes to avoid burning. Use ripe but firm figs for best texture.
