Easy Fresh Marinated Cherry Tomato Burrata Salad

A simple yet elegant salad featuring marinated cherry tomatoes and creamy burrata cheese, perfect for summer entertaining or a quick, impressive meal.

  • 2 pints cherry tomatoes (about 600g), halved
  • 2 large balls burrata cheese (about 8 oz or 225g total)
  • 1/3 cup extra virgin olive oil (80ml)
  • 2 tablespoons balsamic vinegar (30ml)
  • 2 cloves fresh garlic, thinly sliced
  • 1/4 cup fresh basil, roughly torn (about 10g), plus extra for garnish
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon honey (optional)

Instructions

  1. Wash and thoroughly dry 2 pints of cherry tomatoes. Halve them lengthwise and place them in a large mixing bowl.
  2. In a small jar or bowl, combine 1/3 cup extra virgin olive oil, 2 tablespoons balsamic vinegar, 2 thinly sliced garlic cloves, 1/4 cup torn fresh basil, 1 teaspoon fresh thyme leaves, 1/2 teaspoon flaky sea salt, 1/4 teaspoon black pepper, and 1/4 teaspoon red pepper flakes (if using). Whisk until well combined.
  3. Pour the marinade over the halved tomatoes. Gently toss to coat. Let sit at room temperature for at least 30 minutes, or up to 2 hours.
  4. About 20 minutes before serving, take the burrata out of the fridge to bring to room temperature.
  5. Transfer the marinated tomatoes to a serving platter using a slotted spoon or tongs, leaving behind most of the liquid.
  6. Gently place the burrata balls on top of the tomatoes. Cut a small cross on the top of each ball or tear them open with your hands.
  7. Drizzle a spoonful of the reserved marinade liquid over the burrata and tomatoes. Sprinkle with additional flaky sea salt, fresh cracked pepper, and torn basil leaves. Serve immediately with crusty bread.

Notes

Don’t skip the resting time for the tomatoes; it’s essential for flavor. Bring burrata to room temperature before serving. Use a serrated knife to cut burrata without squishing it. Toast bread for serving. Taste and adjust seasoning based on tomato sweetness.
