  • 1 French baguette or rustic Italian bread, sliced Β½ inch thick
  • Optional: Parmesan cheese, shaved or grated

Instructions

  1. In a mixing bowl, combine diced Roma tomatoes, minced garlic, and chopped fresh basil.
  2. Add 3 tablespoons of extra virgin olive oil and 1 teaspoon of balsamic vinegar.
  3. Season with sea salt and freshly cracked black pepper to taste.
  4. Gently toss everything together without mashing the tomatoes and let sit for about 10 minutes to marinate.
  5. Slice the French baguette into Β½ inch thick pieces using a serrated knife.
  6. Preheat grill pan or oven broiler.
  7. Arrange bread slices in a single layer on a baking sheet or grill pan and toast for 2-3 minutes on each side until golden brown and crisp.
  8. Optionally, rub the warm toasted bread slices lightly with a peeled garlic clove for extra fragrance.
  9. Spoon the tomato mixture generously onto each toasted bread slice just before serving.
  10. If desired, sprinkle shaved Parmesan cheese on top.
  11. Serve immediately while bread is still crisp.
