  • 2 ripe avocados, peeled and pitted
  • 1 tablespoon fresh lemon juice

  • Cherry tomatoes, halved
  • Feta cheese, crumbled (or dairy-free feta for vegan option)
  • Red pepper flakes
  • Smoked paprika
  • Fresh herbs (cilantro, parsley, or basil), chopped finely
  • Optional: toasted pumpkin seeds or pine nuts
  • Optional: everything bagel seasoning
  • Optional: thinly sliced radishes or cucumber
  • Optional: drizzle of honey or balsamic glaze

Instructions

  1. Toast the bread slices until golden and crisp. If using a grill pan, brush each side lightly with olive oil before toasting.
  2. While the bread is toasting, place avocado flesh in a mixing bowl. Add lemon juice, salt, and freshly ground black pepper. Mash with a fork or potato masher until creamy but still a bit chunky.
  3. Spread a generous layer of the mashed avocado onto each toast slice.
  4. Top each slice with halved cherry tomatoes and crumbled feta cheese. Sprinkle smoked paprika and red pepper flakes to taste. Add fresh herbs last.
  5. Optionally, scatter toasted pumpkin seeds or pine nuts over the platter. Drizzle lightly with honey or balsamic glaze if desired.
  6. Drizzle the platter with olive oil and add a last sprinkle of salt if needed. Serve immediately.
