This Easy Crockpot Honey Garlic Chicken Thighs recipe is the kind of dinner that makes you look like you planned ahead when you absolutely did not. It’s sweet, savory, and the garlic gets all soft and mellow in that honey-soy glaze.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • ½ cup honey
  • ⅓ cup low-sodium soy sauce
  • 68 cloves garlic, minced
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Trim the chicken thighs: Open your package of boneless, skinless chicken thighs and give them a quick once-over. Trim off any excess fat or weird bits with your knife. Pat the thighs dry with paper towels.
  2. Make the sauce: In a small bowl or measuring cup, whisk together the honey, low-sodium soy sauce, and minced garlic. If you want a little heat, stir in a pinch of red pepper flakes.
  3. Layer the chicken in the crockpot: Place the chicken thighs in the bottom of your slow cooker. Try to arrange them in a single layer if possible. Pour the honey garlic sauce evenly over the top.
  4. Cook on low (6-7 hours) or high (3-4 hours): Cover the crockpot and set it to low for the most tender results. About halfway through, if you’re home, give the chicken a gentle stir or flip the pieces with tongs so the glaze coats everything evenly.
  5. Thicken the sauce (optional): When the chicken is done, use tongs to transfer it to a plate. Pour the liquid from the crockpot into a small saucepan. Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water until smooth, then whisk it into the sauce. Bring it to a simmer over medium heat, stirring constantly, until it thickens into a glossy glaze—about 2-3 minutes. Pour it back over the chicken.
  6. Serve and enjoy: Spoon that gorgeous, sticky sauce over the chicken. Garnish with chopped green onions or sesame seeds if you’re feeling fancy.

Notes

Use fresh garlic, not pre-minced jarred garlic, to avoid bitterness. Don’t lift the lid too often during cooking. For a thicker sauce, simmer with a cornstarch slurry at the end. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
