A classic full English breakfast made easy and crispy using a single sheet pan, perfect for family brunches with less fuss and more flavor.

  • 8 classic British pork sausages (Cumberland preferred)
  • 8 thick-cut back bacon rashers (smoked bacon recommended)
  • 4 large eggs, preferably free-range and at room temperature
  • 1 can (about 400g/14 oz) good-quality baked beans
  • 1 cup (about 150g) halved cherry tomatoes
  • 2 cups (about 150g) button or cremini mushrooms, cleaned and halved or quartered
  • 12 frozen hash browns
  • 4 slices black pudding (optional)
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • A handful of fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a large sheet pan with baking paper or a silicone baking mat.
  3. Arrange the 8 sausages evenly spaced on one side of the pan.
  4. Lay the 8 bacon rashers flat next to the sausages without overlapping.
  5. In a bowl, drizzle 1 tablespoon olive oil over the mushrooms and cherry tomatoes, season lightly with salt and pepper, then spread them on the pan in a single layer.
  6. Place the 12 hash browns on the remaining side of the pan, drizzle with the remaining olive oil and season with a pinch of salt.
  7. If using, add the 4 slices of black pudding spaced out on the pan.
  8. Roast in the oven for 20 minutes, turning the sausages and bacon halfway through after 10 minutes.
  9. While roasting, gently heat the baked beans in a small saucepan over low heat.
  10. Prepare the eggs by frying fresh in a non-stick pan or baking in ramekins at 350°F (175°C) for 8-10 minutes for runny yolks.
  11. After 20 minutes, check that everything is golden and crispy and sausages are cooked through (internal temp 160°F/71°C). If needed, roast for another 5 minutes.
  12. Serve the sausages, bacon, mushrooms, tomatoes, hash browns, black pudding (if using), and baked beans with eggs on the side.
  13. Sprinkle chopped fresh parsley over the dish before serving.

Notes

Do not overcrowd the pan to ensure crispiness. Turn bacon and sausages halfway through cooking for even browning. Use room temperature ingredients for even cooking. For leftovers, reheat in a 350°F oven for 10-12 minutes to maintain crispness. Optional black pudding can be omitted or replaced with grilled halloumi or mushrooms for vegetarian version.
