Easy Creamy Dark Cherry Clafoutis Recipe Perfect for Summer Desserts

A creamy, comforting clafoutis featuring dark cherries and vanilla bean, perfect for a quick and elegant summer dessert.

  • 2 cups (300g) dark cherries, pitted, fresh or frozen
  • 3 large eggs, room temperature
  • 1 cup (240 ml) milk, whole or 2% (can substitute almond or oat milk for dairy-free)
  • 1/3 cup (65g) granulated sugar
  • 1/2 cup (65g) all-purpose flour (can substitute gluten-free flour blend)
  • 1 whole vanilla bean pod, split and seeds scraped out
  • Pinch of salt
  • 1 tablespoon unsalted butter, for greasing the baking dish
  • Powdered sugar (optional, for dusting before serving)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Butter your 9-inch baking dish thoroughly.
  2. Using a sharp knife, carefully split the vanilla bean pod lengthwise and scrape out the seeds. Set both seeds and pod aside.
  3. In a medium bowl, whisk together the flour, granulated sugar, and a pinch of salt until combined.
  4. In a separate large bowl, crack the eggs and whisk until frothy. Add the milk and vanilla bean seeds, whisking gently to combine.
  5. Gradually whisk the dry mixture into the wet ingredients to avoid lumps. The batter should be smooth and slightly runny.
  6. Fold in the vanilla bean pod (optional but recommended).
  7. Spread the pitted cherries evenly in the buttered baking dish. If using frozen cherries, no need to thaw.
  8. Pour the batter over the cherries, covering them evenly.
  9. Bake in the preheated oven for 35-40 minutes until the clafoutis puffs slightly and turns golden around the edges. The center should jiggle slightly but not be liquid.
  10. Remove from oven and cool on a rack for about 15 minutes before serving.
  11. Dust with powdered sugar if desired.

Notes

If the clafoutis browns too quickly but isn’t set in the middle, tent with foil for the last 10 minutes of baking. Use room temperature eggs for better batter blending and even baking. Butter the dish generously to prevent sticking and add richness. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream. Store leftovers covered in the refrigerator for up to 3 days and reheat gently in a 300Β°F oven.
