This easy creamy cucumber salad with dill is a quick, refreshing side dish perfect for summer. Ready in about 10 minutes, it features crisp cucumbers in a tangy sour cream and dill dressing.

  • 2 large English cucumbers
  • 1 teaspoon salt, plus more for salting
  • 1 cup sour cream
  • 1/4 cup fresh dill, finely chopped
  • 1 tablespoon white vinegar
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup red onion, thinly sliced (optional)

Instructions

  1. Slice the cucumbers into thin rounds, about 1/8-inch thick. If using English cucumbers, leave the skin on. If using regular cucumbers, peel and seed them first.
  2. Place the sliced cucumbers in a large bowl and sprinkle with about 1 teaspoon of salt. Toss well to coat. Let sit for 10 to 15 minutes until water pools at the bottom.
  3. Transfer the cucumbers to a colander and rinse quickly with cold water. Spread on a clean kitchen towel or paper towels and pat dry gently.
  4. In a medium bowl, whisk together the sour cream, chopped dill, white vinegar, sugar, and black pepper. Taste and adjust seasoning if needed.
  5. Add the dried cucumber slices and red onion (if using) to the dressing. Gently fold until well coated.
  6. For best flavor, cover and refrigerate for 15 to 20 minutes before serving. Can also be served immediately.
  7. Give a final stir, transfer to a serving bowl, and garnish with extra dill or black pepper. Serve cold.

Notes

Don’t skip the salting step—it draws out excess moisture and keeps the salad from becoming watery. For best texture, combine cucumbers and dressing no more than 30 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days. Do not reheat.
