  • ½ cup (120 ml) mayonnaise
  • ½ cup (120 ml) sour cream
  • ¾ cup (90 g) cotija cheese, crumbled
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 2 tablespoons fresh cilantro, finely chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the canned corn under cold water. Shake off excess water and pat dry with paper towels to avoid watery dip. (About 3 minutes)
  2. Heat a large skillet or cast iron pan over medium-high heat. Add the corn in an even layer—no oil needed. Let it cook undisturbed for 3-4 minutes until brown spots form. Stir and cook for another 2-3 minutes to get charred bits all around. (Total 6-8 minutes)
  3. While the corn chars, mix mayonnaise, sour cream, lime juice, chili powder, garlic powder, smoked paprika, salt, and pepper in a mixing bowl until smooth. (About 3 minutes)
  4. Once the corn is charred and slightly cooled, fold it gently into the creamy base along with most of the cotija cheese (reserve a little for topping). Add chopped cilantro if using. Taste and adjust seasoning as needed. (5 minutes)
  5. Serve immediately warm or refrigerate for 30 minutes to meld flavors better before serving.

Notes

Drain and pat dry the canned corn well before charring to avoid sogginess. Fresh lime juice is preferred for brightness. The dip can be served warm or chilled. For vegan or dairy-free versions, substitute mayo and sour cream with vegan alternatives and use nutritional yeast instead of cotija cheese. Add jalapeños or cayenne pepper for extra heat.
