  • 2 flour tortillas (8-inch)
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 teaspoon butter or oil
  • Optional: salsa, sour cream, guacamole, or ranch dressing for dipping

Instructions

  1. Heat a non-stick skillet over medium heat for about 2 minutes.
  2. Add 1 teaspoon of butter or oil to the pan and swirl to coat.
  3. Place one tortilla in the pan and cook for 30 seconds until softened.
  4. Sprinkle 1/2 cup of shredded cheese evenly over the tortilla, leaving a 1/2-inch border around the edges.
  5. Place the second tortilla on top and press down gently with a spatula.
  6. Cook for 2-3 minutes on the first side until golden-brown spots appear.
  7. Carefully flip the quesadilla and cook for another 2-3 minutes on the second side.
  8. Transfer to a cutting board and let rest for 1 minute.
  9. Slice into 1-inch wide strips using a sharp knife or pizza cutter.
  10. Serve immediately with your choice of dips.

Notes

Use medium heat for best resultsβ€”too high burns the tortilla, too low prevents crisping. Let the quesadilla rest for 1 minute before cutting to prevent cheese from oozing out. For meal prep, cook and refrigerate for up to 3 days; reheat in a toaster oven or air fryer at 350Β°F for 3-4 minutes. Avoid microwaving as it makes the tortilla soggy.
