Easy Canning Cherry Tomatoes in Olive Oil and Garlic

A simple and flavorful recipe for canning cherry tomatoes roasted in olive oil and garlic, perfect for gifting, entertaining, or adding a rustic touch to your meals.

  • 3 pounds (1.4 kg) cherry tomatoes, washed and dried
  • 1 cup (240 ml) extra virgin olive oil
  • 6 to 8 garlic cloves, peeled and thinly sliced
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • A few sprigs of fresh thyme or rosemary (optional)
  • Preserving pint-sized jars with lids and rings, clean and sterilized

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, gently toss 3 pounds (1.4 kg) of cherry tomatoes with 1 cup (240 ml) of extra virgin olive oil, 6 to 8 thinly sliced garlic cloves, 1 teaspoon sea salt, and ½ teaspoon freshly ground black pepper. Add fresh herbs if using.
  3. Spread the mixture evenly on a rimmed baking sheet in a single layer.
  4. Roast in the oven for about 25 to 30 minutes until tomatoes soften and start to wrinkle but do not collapse.
  5. While roasting, sterilize pint-sized jars and lids by boiling them for 10 minutes and keep them hot.
  6. Carefully spoon the roasted tomatoes and garlic into the hot jars, then pour the olive oil from the baking sheet over the tomatoes to cover completely, leaving about ½ inch (1.2 cm) headspace.
  7. Wipe rims clean and seal jars with lids and rings, fingertip tight but not overly tightened.
  8. Process the jars in a boiling water bath for 15 minutes, fully submerging jars with a rack underneath.
  9. Remove jars and let cool on a towel-lined counter overnight.
  10. Check seals the next day by pressing the center of each lid; if it doesn’t pop back, jars are sealed and safe to store.

Slice garlic thinly to avoid overpowering flavor; monitor tomatoes closely during roasting to prevent mushiness; use high-quality olive oil for best flavor; sterilize jars properly and do not skip water bath canning for safety; allow jars to rest for a week before opening for best flavor; gently swirl jars if oil appears cloudy after a few days.
