These Easy Broccoli Cheddar Mini Quiches are the ultimate lunchbox solution—packed with veggies, loaded with sharp cheddar, and ready in under 30 minutes. Perfect for busy weeknights, they’re forgiving, adaptable, and taste great cold or reheated.

Ingredients

Scale
  • 6 large eggs, room temperature
  • 1/4 cup whole milk
  • 1/4 cup heavy cream
  • 1 cup sharp cheddar cheese, freshly shredded
  • 1 cup broccoli florets, finely chopped
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Butter or non-stick spray for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Generously grease a 12-cup muffin tin with butter or non-stick spray.
  2. Blanch the broccoli: Bring a small saucepan of water to a boil. Add finely chopped broccoli florets and cook for exactly 60 seconds until bright green. Drain and rinse with cold water. Pat dry with a clean towel.
  3. In a large mixing bowl, whisk together eggs, whole milk, heavy cream, salt, pepper, and garlic powder until smooth and slightly frothy, about 30 seconds.
  4. Fold in the shredded cheddar cheese and blanched broccoli until evenly distributed.
  5. Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 15-18 minutes, until edges are golden brown and centers are set but slightly jiggly. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  7. Remove from oven and let cool in the pan on a wire rack for 5 minutes. Run a thin spatula around the edges to loosen, then pop out the quiches.

Notes

For best results, use room temperature eggs and freshly shredded cheese. Don’t skip blanching the broccoli to prevent watery quiches. Let quiches cool completely before storing to avoid sogginess. They can be refrigerated for up to 5 days or frozen for up to 3 months.
