Easy Bacon-Wrapped Smokies with Brown Sugar Glaze

Little smoked sausages wrapped in bacon, coated in brown sugar, and baked until the bacon crisps up and the sugar turns into a sticky, caramelized glaze. Sweet, salty, smoky, and completely addictive—perfect for parties and gatherings.

  • 1 (14-ounce) package little smokies (cocktail sausages)
  • 1 pound thin-cut bacon
  • 1/2 cup packed light brown sugar
  • Optional: 1-2 tablespoons maple syrup
  • Optional: Pinch of cayenne pepper or red pepper flakes

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil or parchment paper, then place a wire rack on top if using. Spray the rack lightly with non-stick cooking spray.
  2. Cut each slice of thin-cut bacon crosswise into three equal pieces (about 2-3 inches long).
  3. Wrap one piece of bacon around one little smokie, overlapping slightly. Secure with a toothpick pushed through the center. Place the seam on the bottom.
  4. Pour brown sugar into a small bowl. Roll each wrapped smokie in the brown sugar, pressing gently to coat. Shake off excess. Place on prepared wire rack, spacing about 1/2 inch apart.
  5. If using cayenne or red pepper flakes, mix into brown sugar before coating.
  6. Bake for 25-30 minutes, rotating the baking sheet halfway through, until bacon is crispy and brown sugar has caramelized into a glossy glaze.
  7. Let rest on wire rack for 5 minutes before serving.

Notes

Use thin-cut bacon for best crispiness. Don’t skip the wire rack for even cooking. Watch the sugar to prevent burning. Make extra—these disappear fast. Let rest 5 minutes before serving. Can be assembled up to 24 hours ahead (coat with sugar just before baking).
