Delicious Grilled Peaches Recipe with Creamy Mascarpone and Honey

  • 4 ripe but firm peaches, halved and pitted
  • 1 cup (about 240g) mascarpone cheese, room temperature
  • 3 tablespoons honey, preferably raw or wildflower
  • 1 tablespoon olive oil, for brushing
  • 1 teaspoon freshly squeezed lemon juice
  • A small handful fresh mint leaves, chopped (optional)
  • A pinch ground cinnamon (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat, about 375°F (190°C).
  2. Rinse and dry the peaches gently. Cut each peach in half and remove the pit. Brush the cut sides lightly with olive oil.
  3. In a small bowl, combine mascarpone, lemon juice, and a pinch of cinnamon (if using). Stir gently until smooth and creamy. Set aside.
  4. Place peaches cut-side down on the grill. Cook for about 3-4 minutes without moving them to get grill marks.
  5. Flip peaches carefully and grill the skin side for another 2 minutes to warm through. Peaches should be tender but still hold their shape.
  6. Remove peaches from grill and transfer to a serving platter, cut side up.
  7. Spoon a generous dollop of the mascarpone mixture onto each peach half.
  8. Drizzle honey over the mascarpone and peaches.
  9. Sprinkle chopped fresh mint leaves over the top for garnish and serve immediately.

Notes

If peaches are underripe, sprinkle lightly with sugar before grilling to enhance sweetness. Use room temperature mascarpone for easier spreading. Drizzle honey just before serving to keep it glossy. For vegan variation, substitute mascarpone with coconut cream-based spread and honey with maple syrup or agave nectar.
