  • 12 tablespoons (816 grams) powdered sugar (optional)
  • Unsweetened cocoa powder for dusting

Instructions

  1. Finely chop 8 ounces (225 grams) of dark chocolate and place in a heatproof mixing bowl.
  2. Warm Β½ cup (120 ml) of heavy cream in a small saucepan over medium heat until it just starts to simmer, then remove from heat.
  3. Pour the hot cream over the chopped chocolate and let sit undisturbed for 2 minutes, then whisk gently until smooth and glossy. If needed, place the bowl over warm water briefly and stir to fully melt.
  4. Stir in 2 tablespoons (28 grams) softened unsalted butter, 2 tablespoons (30 ml) bourbon, and 1 teaspoon pure vanilla extract until fully incorporated and silky.
  5. Taste the ganache and add 1-2 tablespoons (8-16 grams) powdered sugar if a sweeter truffle is desired; mix well.
  6. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until firm enough to scoop.
  7. Using a teaspoon or melon baller, scoop portions of the chilled ganache and quickly roll between palms to form smooth balls.
  8. Roll each truffle ball in unsweetened cocoa powder using a small bowl or sieve and place on a parchment-lined tray.
  9. Refrigerate the truffles for another 30 minutes to set before serving.

Chop chocolate finely for smooth melting. Warm cream gently to avoid scalding. Use room temperature butter to prevent ganache from seizing. Chill ganache thoroughly before shaping. Keep hands cool when rolling truffles to avoid melting. For a dairy-free version, substitute heavy cream with full-fat coconut milk and use vegan butter. Flavors improve if made a day ahead.
