A simple yet impressive side dish featuring tender delicata squash with crispy edges, finished with a sweet and savory maple butter glaze. Ready in under 45 minutes.

  • 2 medium delicata squash, washed
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons real maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon cinnamon
  • 1 teaspoon sage or thyme, fresh or dried

Instructions

  1. Preheat oven to 425Β°F (220Β°C).
  2. Wash squash thoroughly. Slice in half lengthwise, scoop out seeds and pulp, and slice each half into half-moon shapes about 1/2 inch thick.
  3. Place squash slices on a large sheet pan. Drizzle with olive oil and sprinkle with salt, pepper, and cinnamon. Toss to coat evenly and spread in a single layer.
  4. Roast for 20 minutes until edges start to brown and squash is tender.
  5. While squash roasts, melt butter and stir in maple syrup until smooth.
  6. Remove pan from oven. Brush squash generously with maple butter glaze. Return to oven and roast for another 10 minutes until caramelized.
  7. Remove from oven, sprinkle with fresh sage or thyme, and let cool for 2 minutes before serving.

Notes

Do not crowd the pan to ensure crispiness rather than steaming. Roast at high heat for caramelization. Add the maple glaze in the last 10 minutes to prevent burning. The skin is edible and helps hold the shape.
