  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 2 tablespoons pure maple syrup
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: fresh thyme or rosemary for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly. Trim off both ends and slice crosswise into ½-inch thick rings. Scoop out the seeds and stringy pulp from each ring.
  3. In a small bowl, combine 1 tablespoon cornstarch, 1 teaspoon smoked paprika, ½ teaspoon garlic powder, and a generous pinch of salt and black pepper. Whisk together.
  4. Place the squash rings in a medium mixing bowl. Drizzle with 2 tablespoons olive oil and toss gently until each ring is coated. Sprinkle the cornstarch mixture over the rings and toss again until evenly coated.
  5. Arrange the rings in a single layer on the prepared baking sheet, leaving space between each one.
  6. Roast for 15 minutes undisturbed.
  7. Remove the sheet from the oven. Flip each ring carefully. Brush or drizzle 1 tablespoon of maple syrup over the rings, then return to the oven for 8 minutes.
  8. Remove the sheet again, flip the rings once more, and brush or drizzle with the remaining 1 tablespoon maple syrup. Return to the oven for 5-7 minutes, watching closely until the syrup bubbles and caramelizes but does not burn.
  9. Let the rings cool on the baking sheet for 2-3 minutes. Transfer to a serving platter, sprinkle with flaky sea salt and fresh thyme if desired, and serve warm.

Notes

Slice rings exactly ½-inch thick for best texture. Don’t skip the cornstarch—it creates the crispy coating. Add maple syrup in stages to prevent burning. Let rings rest 2-3 minutes before serving to set the glaze. For air fryer: cook at 375°F for 10 minutes, flip, brush with maple syrup, and cook 5-7 more minutes.
