  • 3 medium zucchini, grated and squeezed dry
  • ½ cup (65 g) all-purpose flour (or chickpea flour for gluten-free)
  • 2 large eggs, room temperature
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 3 tbsp honey
  • 2 cloves garlic, finely minced (for glaze)
  • 1 tbsp apple cider vinegar
  • Pinch of red pepper flakes (optional)
  • 4 oz (115 g) goat cheese, softened
  • ¼ cup (60 ml) Greek yogurt
  • 2 tbsp fresh herbs (chives, parsley, dill), finely chopped
  • 1 tsp lemon juice
  • Salt and pepper, to taste (for dip)

Instructions

  1. Grate and drain the zucchini using a box grater or food processor. Press out as much moisture as possible using a fine mesh sieve or clean kitchen towel (about 5 minutes).
  2. In a large bowl, whisk together eggs, minced garlic, salt, and pepper. Add the drained zucchini and flour, stirring until just combined. Batter should be thick but not dry; add more flour if needed.
  3. Prepare the honey garlic glaze by warming honey, minced garlic, apple cider vinegar, and red pepper flakes (if using) in a small saucepan over low heat for about 3 minutes, stirring frequently. Avoid burning the garlic.
  4. Make the herbed goat cheese dip by mixing softened goat cheese, Greek yogurt, chopped herbs, lemon juice, salt, and pepper until smooth. Chill in the fridge.
  5. Heat olive oil in a skillet over medium heat. Spoon about 2 tablespoons of batter per fritter into the pan, flattening slightly. Cook for 3–4 minutes per side until golden and crispy. Cook in batches, adding more oil if needed.
  6. Transfer cooked fritters to a plate and drizzle generously with the honey garlic glaze while still warm.
  7. Serve fritters warm with the chilled herbed goat cheese dip, garnished with extra herbs or cracked black pepper if desired.

Notes

Drain zucchini thoroughly to avoid soggy fritters. Use hot oil and do not overcrowd the pan for best crispiness. Keep heat low when making the glaze to prevent burning garlic. Batter can be prepared ahead and refrigerated. For gluten-free, substitute flour with chickpea or rice flour. Vegan adaptations include flax eggs and vegan cream cheese.
