A quick and easy side dish featuring zucchini spears grilled to crispy perfection with a garlic-Parmesan coating that is flavorful and addictive.

  • 3 medium zucchinis (about 600g / 1.3 lbs)
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, finely minced
  • ½ cup freshly grated Parmesan cheese (about 50g)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Zest of half a lemon (optional)

Instructions

  1. Wash and dry the zucchinis. Trim the ends and slice each zucchini lengthwise into 6-8 spears, about ½-inch thick.
  2. In a large mixing bowl, combine olive oil, minced garlic, grated Parmesan, Italian seasoning, salt, black pepper, and lemon zest if using. Stir well.
  3. Add the zucchini spears to the bowl and toss gently to coat each spear with the marinade. Let marinate for 10-15 minutes.
  4. Preheat grill or grill pan to medium-high heat (about 400°F). Lightly oil the grill or pan surface to prevent sticking.
  5. Place zucchini spears in a single layer on the grill or pan. Cook for 3-4 minutes per side, flipping gently with tongs, until grill marks appear and zucchini is tender but not mushy.
  6. Remove from grill and serve immediately, garnished with extra Parmesan and fresh basil leaves if desired.

Notes

If cheese melts too fast and sticks to the grill, use foil or a grill tray. Avoid overcrowding the grill for better crispiness. For a vegan version, substitute Parmesan with nutritional yeast and olive oil with avocado oil. Oven baking at 425°F for 15-20 minutes is a good alternative to grilling.
