  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

  • 1/2 teaspoon salt, plus more for seasoning pork
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 large eggs, beaten
  • 2 tablespoons olive oil or avocado oil spray
  • 3 medium apples, peeled, cored, and diced
  • 1/2 cup finely diced yellow onion
  • 1/3 cup apple cider vinegar
  • 1/4 cup brown sugar, packed
  • 1/4 cup raisins or dried cranberries (optional)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Pinch of salt
  • 1 tablespoon butter (optional)

Instructions

  1. Make the apple chutney: In a small saucepan, combine diced apples, diced onion, apple cider vinegar, brown sugar, raisins (if using), ginger, cinnamon, cloves, and a pinch of salt. Bring to a gentle boil over medium heat, then reduce heat to low and simmer uncovered for 15-20 minutes, stirring occasionally, until apples are tender and liquid is syrupy. Stir in butter if using, then remove from heat and set aside.
  2. Prep the pork chops: Pat pork chops dry with paper towels and season both sides with salt and pepper. In one shallow bowl, beat the eggs. In another shallow bowl, combine panko breadcrumbs, Parmesan, garlic powder, smoked paprika, onion powder, salt, pepper, and cayenne (if using). Mix well.
  3. Bread the pork chops: Dip each seasoned pork chop into the beaten eggs, letting excess drip off, then press into the breadcrumb mixture, coating both sides. Place on a plate without stacking.
  4. Air fry the pork chops: Preheat air fryer to 400Β°F (200Β°C) for 3 minutes. Lightly spray the basket with oil. Place breaded chops in a single layer without touching (work in batches if needed). Lightly spray tops with oil. Air fry for 10-12 minutes, flipping halfway, until internal temperature reaches 145Β°F (63Β°C) and coating is golden and crispy.
  5. Rest and serve: Let pork chops rest for 5 minutes. Serve with a generous spoonful of apple chutney on top or on the side.

Notes

Pat pork chops dry for maximum crispiness. Let breaded chops rest 5 minutes before air frying to help coating adhere. Don’t overcrowd the air fryer basket. Use a meat thermometer to ensure pork reaches 145Β°F. Chutney can be made ahead and refrigerated for up to a week. For a low-carb version, use crushed pork rinds or almond flour instead of panko.
