  • 1/4 cup sliced almonds (about 30 g)
  • 1/4 cup freshly grated Parmesan cheese (about 25 g)
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 1 clove garlic, minced (optional)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper
  • Lemon zest from half a lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Trim the asparagus by bending each spear near the base until it snaps to remove the tough woody end.
  3. In a mixing bowl, toss the asparagus with olive oil, minced garlic (if using), salt, and pepper until evenly coated.
  4. Spread the asparagus evenly on the prepared baking sheet in a single layer, leaving space between spears.
  5. Sprinkle the sliced almonds evenly over the asparagus.
  6. Roast in the oven for 12-15 minutes. At the 7-minute mark, gently turn the asparagus and almonds with tongs to promote even browning.
  7. Remove from oven and immediately sprinkle with freshly grated Parmesan cheese and lemon zest if using.
  8. Serve immediately while warm and crispy.

Notes

If almonds brown too quickly, add them halfway through roasting or roast separately. Use freshly grated Parmesan for best melting and flavor. Lemon zest brightens the dish and balances richness. For dairy-free, substitute Parmesan with nutritional yeast or vegan cheese. For nut-free, replace almonds with toasted breadcrumbs or pumpkin seeds.
