  • 2 tablespoons grated Parmesan (optional)
  • Pinch of nutmeg (optional)

Instructions

  1. Heat olive oil and butter in a large soup pot over medium heat. Add chopped onion, celery, and carrots. Stir occasionally until onions are translucent and carrots begin to soften, about 5-7 minutes. Add minced garlic last and cook for 1 minute, being careful not to burn.
  2. Add diced potatoes and pour in the vegetable or chicken broth. Bring to a gentle boil, then reduce heat to simmer. Cover and cook for about 15 minutes or until potatoes and carrots are fork-tender.
  3. Use an immersion blender to puree the soup directly in the pot until smooth and silky. If using a regular blender, carefully blend in batches. Add more broth or milk if the soup is too thick.
  4. Stir in the milk and gently warm the soup without boiling, about 3-5 minutes. Season with salt, black pepper, and a pinch of nutmeg if desired. Fold in Parmesan and fresh herbs if using.
  5. Ladle soup into bowls and garnish with extra herbs or a drizzle of olive oil. Serve warm.

Use starchy potatoes like Russets for best thickening results. Blend soup while hot for smooth texture. Warm milk gently to avoid curdling.
