Instructions

  1. Prep your ingredients: Peel and cube the potatoes into 1-inch pieces. Dice the onion. Mince the garlic. Slice the smoked sausage into rounds about ΒΌ-inch thick. Cube the cream cheese and let it sit on the counter to soften.
  2. Layer everything in the slow cooker: Start with the potatoes on the bottom. Add the diced onion, minced garlic, and sliced sausage on top. Sprinkle the dried thyme, rosemary, smoked paprika, salt, and pepper over everything. Pour in the chicken broth, making sure the potatoes are mostly submerged.
  3. Cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are fork-tender and the sausage has infused the broth. Do not open the lid too often.
  4. About 30 minutes before serving, remove the lid and stir in the heavy cream and softened cream cheese. Stir gently until the cream cheese is completely melted and the broth is smooth and velvety.
  5. Taste and adjust seasoning. Add more salt, pepper, or a pinch of cayenne if desired. Let it cook for another 15-20 minutes on low with the lid off if you want it to thicken more.

For best results, soften cream cheese to room temperature before adding to avoid lumps. If soup is too thick, stir in extra broth or milk. If too thin, cook with lid off for 20-30 minutes. Soup tastes even better the next day. For a dairy-free version, use full-fat canned coconut milk and dairy-free cream cheese. For a spicy kick, use andouille sausage and add cayenne pepper.
