This creamy slow cooker chorizo queso is the ultimate party dip, requiring minimal effort for maximum flavor. With real ingredients like chorizo, Velveeta, and sharp cheddar, it stays perfectly smooth and dippable for hours.

  • 1 pound fresh Mexican chorizo, casings removed
  • 1 small yellow onion, finely diced (about ¾ cup)
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and finely diced
  • 1 pound block Velveeta, cut into 1-inch cubes
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 4 ounces cream cheese, softened and cut into cubes
  • 1 can (12 ounces) evaporated milk
  • 1 can (10 ounces) Rotel tomatoes with green chilies, undrained
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Tortilla chips for serving
  • Optional toppings: chopped fresh cilantro, diced tomatoes, sliced jalapeños, pickled red onions, crumbled cotija cheese

Instructions

  1. Heat a large skillet over medium-high heat. Add the chorizo, breaking it apart with a wooden spoon. Cook for 6 to 8 minutes until browned and cooked through. Do not drain the fat.
  2. Reduce heat to medium. Add the diced onion to the skillet and cook for 3 to 4 minutes until softened. Add the minced garlic and diced jalapeño, stirring constantly for about 30 seconds until fragrant.
  3. Sprinkle in the cumin, smoked paprika, chili powder, and cayenne (if using). Stir and let the spices toast for about 30 seconds.
  4. Using a slotted spoon, transfer the chorizo mixture to a 3 to 4 quart slow cooker, leaving as much rendered fat in the skillet as possible.
  5. Add the cubed Velveeta, shredded cheddar, softened cream cheese, evaporated milk, and undrained Rotel tomatoes to the slow cooker. Do not stir.
  6. Cover and cook on LOW for 1½ to 2 hours. Do not lift the lid during the first hour.
  7. After 1½ hours, stir the queso. If not fully melted, cover and cook for another 15 to 30 minutes until smooth and uniform.
  8. Taste and add salt and pepper as needed. Switch the slow cooker to WARM setting. Serve directly from the pot with tortilla chips and optional toppings.

Notes

Shred your own cheddar for smooth melting. Cook on LOW heat to prevent graininess. Queso thickens as it sits; thin with a splash of milk if needed. Can be made a day ahead and reheated gently.
