  • 1/2 teaspoon vanilla extract
  • Pinch of fine sea salt

Instructions

  1. In a mason jar or airtight container, mash the ripe banana with a fork until mostly smooth, leaving a few small lumps for texture.
  2. Add the milk, peanut butter, maple syrup (if using), and vanilla extract. Whisk or stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until well combined and all oats are submerged in the liquid.
  4. Taste and adjust sweetness or peanut butter level if desired.
  5. Cover and refrigerate for at least 4 hours, preferably overnight.
  6. In the morning, stir the oats well. If too thick, add a splash of milk to loosen. Serve cold or microwave for 45-60 seconds for warm oats. Top with sliced banana, a drizzle of peanut butter, and optional cinnamon or chocolate chips.

Notes

For best texture, use old-fashioned rolled oats, not quick or steel-cut. The riper the banana, the sweeter the oats. Chia seeds are optional but recommended for a thicker, creamier texture. Toppings like sliced banana and peanut butter drizzle should be added fresh just before serving. Oats keep in the fridge for up to 4 days.
