These creamy peanut butter banana overnight oats take exactly five minutes to throw together the night before. By morning, breakfast is ready and waiting in the fridge—no cooking, no fuss, and no excuse to skip the most important meal of the day.

  • 1/2 cup (50 g) rolled oats (old-fashioned oats)
  • 1 medium ripe banana
  • 2 tablespoons (32 g) creamy peanut butter
  • 1/2 cup (120 ml) milk (any kind)
  • 1 tablespoon (15 ml) maple syrup or honey (optional)
  • 1 tablespoon (12 g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In your jar or bowl, mash the banana with a fork until mostly smooth.
  2. Add the peanut butter and milk to the mashed banana. Stir until the peanut butter is fully incorporated.
  3. Stir in the maple syrup (or honey) and vanilla extract. Adjust sweetness to taste.
  4. Add the rolled oats, chia seeds, and a tiny pinch of salt. Stir until well combined.
  5. Seal the jar or cover the bowl tightly. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, or other desired toppings.

Notes

Mash the banana thoroughly for the creamiest texture. Use a very ripe banana for natural sweetness. If you forget to add chia seeds, the oats will be thinner. Stir halfway through refrigeration if possible to distribute chia seeds evenly. Oats keep in the fridge for up to 5 days. Do not freeze.
