A simple, creamy overnight oats recipe made with just a few ingredients. This no-cook breakfast combines rolled oats, milk, peanut butter, and banana for a rich, pudding-like texture that is perfect for meal prep.

  • 1/2 cup Milk of choice (dairy, almond, oat, or soy)
  • 12 tablespoons Creamy Peanut Butter
  • 1 Ripe Banana
  • 1 teaspoon Chia Seeds (optional)
  • 1/4 teaspoon Ground Cinnamon
  • 1 pinch Salt
  • 1 teaspoon Honey or Maple Syrup (optional, depending on banana sweetness)

Instructions

  1. Peel the ripe banana and mash it directly into the bottom of a 4-8 oz mason jar using a fork.
  2. Pour the rolled oats over the mashed banana and spread them out evenly.
  3. In a separate small bowl or cup, mix the milk, peanut butter, chia seeds, cinnamon, and salt. Stir vigorously until the peanut butter is mostly dissolved into the milk.
  4. Pour the milk mixture over the oats and banana in the jar, ensuring everything is submerged. Use a spoon to push down any dry oats sticking out of the liquid.
  5. Stir the mixture well to ensure there are no dry pockets of oats and the mixture looks thick and uniform.
  6. Seal the jar tightly with its lid and place it in the refrigerator for at least 4 hours, preferably overnight.
  7. In the morning, give the oats a good stir. If the mixture is too thick, add a splash of milk. Top with extra banana slices or a drizzle of peanut butter if desired.

Notes

Use old-fashioned rolled oats, not instant or steel-cut, for the best texture. Ensure the banana is very ripe for natural sweetness. The oats need time to fully hydrate; 8 hours is better than 4. If making for meal prep, add crunchy toppings like granola or nuts right before eating to prevent sogginess. The recipe can be made gluten-free by using certified gluten-free oats.
