  • 8 oz penne pasta (uncooked)
  • 3 cloves garlic, minced

  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach leaves (packed)
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces with salt, pepper, and half the Italian seasoning.
  2. Heat 1 tbsp olive oil over medium heat in a large skillet.
  3. Add chicken and cook for 5-6 minutes, stirring occasionally, until golden brown but not fully cooked through. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant, stirring often.
  5. Pour in chicken broth and heavy cream. Stir well to combine.
  6. Add uncooked penne pasta in an even layer, ensuring pasta is submerged in the liquid. Bring to a gentle boil.
  7. Reduce heat to medium-low, cover with lid, and simmer for 12-15 minutes, stirring occasionally to prevent sticking. Add more broth or water if drying out.
  8. Add cooked chicken back to the skillet along with fresh spinach leaves. Stir gently until spinach wilts and chicken is heated through, about 2-3 minutes.
  9. Remove from heat and stir in grated Parmesan cheese until melted and sauce is rich and velvety.
  10. Taste and adjust salt, pepper, or Italian seasoning as needed.
  11. Serve immediately, garnished with extra Parmesan or fresh basil if desired.

If sauce is too thick after resting, stir in a splash of warm broth or milk to loosen. Do not overcrowd the pan to ensure even cooking. Use penne or rigatoni for best results.
