Creamy One-Pot Taco Soup with Ranch

A quick, hearty, and creamy weeknight dinner that combines taco flavors with ranch seasoning in a single pot. This easy soup is perfect for busy evenings and requires minimal cleanup.

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 boneless, skinless chicken breasts (or 3 cups shredded rotisserie chicken)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 packets dry ranch dressing mix (Hidden Valley recommended)
  • 2 cups low-sodium chicken broth
  • 1 (16-ounce) jar medium or hot salsa
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained (or 2 cups frozen corn)
  • 1 cup heavy cream

Instructions

  1. Heat butter in a large pot or Dutch oven over medium heat. Add diced onion and cook until translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  2. Add chicken breasts to the pot. Sprinkle cumin, chili powder, and one packet of ranch seasoning mix over the chicken. Stir gently to coat.
  3. Pour in chicken broth and salsa. Stir to combine. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until chicken reaches an internal temperature of 165Β°F.
  4. Remove chicken from pot and shred into bite-sized pieces using two forks. Set aside.
  5. Stir drained black beans, corn, and shredded chicken back into the pot. Heat through for 2 minutes.
  6. Reduce heat to low. Stir in heavy cream and the second packet of ranch seasoning mix. Whisk until smooth. Taste and add salt/pepper if needed.
  7. Ladle into bowls and serve immediately with desired garnishes.

Notes

Do not boil the soup after adding heavy cream to prevent curdling. For a lighter version, substitute half-and-half for heavy cream and use low-sodium broth. If using canned salsa that is watery, simmer uncovered for a few minutes before adding cream to reduce liquid. Ranch seasoning adds sodium, so taste before adding extra salt.
