  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz (450 g) cream cheese, softened
  • 1 cup sweetened condensed milk
  • ½ cup rice milk (or almond milk)
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 1 tablespoon freshly squeezed lime juice
  • 1 envelope (7 g) unflavored gelatin (or agar-agar for vegetarian option)
  • Ground cinnamon, for dusting (optional)
  • Toasted rice flakes or chopped toasted almonds (optional garnish)

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbs are evenly coated and resemble wet sand. Press firmly into the bottom of a 9-inch springform pan. Chill in the fridge while preparing the filling.
  2. Dissolve the gelatin: Pour ¼ cup rice milk into a small saucepan and sprinkle gelatin over the surface. Let bloom for 5 minutes without stirring. Warm gently over low heat, stirring constantly until dissolved (2-3 minutes). Do not boil. Remove from heat and cool slightly.
  3. Make the filling: Beat softened cream cheese with an electric mixer on medium speed until smooth and fluffy (2-3 minutes). Gradually add sweetened condensed milk, beating until combined. Add rice milk, vanilla extract, ground cinnamon, and lime juice. Beat until well incorporated.
  4. Combine gelatin and filling: Slowly pour cooled gelatin mixture into cream cheese filling while mixing on low speed. Mix gently by hand with a spatula to fold thoroughly.
  5. Assemble and chill: Pour filling over chilled crust in springform pan. Smooth top with spatula. Cover with plastic wrap and refrigerate at least 4 hours or overnight to set.
  6. Serve: Run a thin knife around edges to loosen cheesecake. Remove springform ring carefully. Dust top with ground cinnamon and garnish with toasted rice flakes or chopped toasted almonds if desired.

Notes

Use room temperature cream cheese to avoid lumps. Gently warm gelatin to preserve setting power. Press crust firmly to avoid crumbling. Chill cheesecake at least 4 hours, preferably overnight for best texture. For vegetarian option, substitute gelatin with agar-agar following package instructions. Variations include vegan cream cheese and coconut condensed milk, gluten-free crust, and seasonal fruit toppings.
