Creamy Instant Pot Lasagna Soup

A quick and easy 30-minute one-pot meal that captures the iconic flavors of lasagna in a comforting soup form, featuring ground beef, ricotta, and tender noodles.

  • 1 lb ground beef (80/20 preferred)
  • 1 lb Italian sausage (optional, mild)
  • 1 box lasagna noodles, broken into pieces
  • 15 oz whole-milk ricotta cheese
  • 24 oz jar marinara sauce
  • 32 oz low-sodium beef broth
  • 2 cups shredded mozzarella cheese
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil (for sautéing)

Instructions

  1. Turn Instant Pot to ‘Sauté’ mode. Add a splash of olive oil if needed, then brown the ground beef (and sausage if using), breaking it up until crumbly. Drain excess grease if necessary.
  2. Add minced garlic, dried oregano, and dried basil to the meat. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Pour in beef broth, marinara sauce, and broken lasagna noodles. Stir well to scrape up browned bits from the bottom of the pot to prevent a ‘Burn’ warning.
  4. Secure the lid, set valve to ‘Sealing’, and select ‘Manual’ or ‘Pressure Cook’ on High for 8 minutes.
  5. Once the timer beeps, perform a Quick Release by carefully turning the valve to ‘Venting’. Wait until the float valve drops before opening the lid.
  6. Open the lid and stir in the ricotta cheese gradually. Then stir in the shredded mozzarella. Use residual heat to melt the cheese, or turn on Sauté for 1-2 minutes if needed.
  7. Taste and season with salt and pepper as needed. If too thick, add a splash of water or broth. Serve hot with crusty bread.

Notes

For best results, use whole-milk ricotta for creaminess. Ensure noodles are submerged in liquid to prevent burning. If using no-boil noodles, ensure there is enough broth. Leftovers thicken in the fridge; add liquid when reheating.
