  • 1 cup whole-milk ricotta cheese
  • 2 tablespoons honey, plus extra for drizzling
  • 1/4 cup shelled and roughly chopped pistachios
  • Zest of 1 lemon
  • 1 tablespoon olive oil
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Rinse and dry the peaches. Slice them in half and carefully remove the pits. Brush the cut sides lightly with olive oil to prevent sticking and promote caramelization.
  2. In a small bowl, stir together 1 cup ricotta and 2 tablespoons honey until smooth and creamy. For extra silkiness, whisk or blend for 30 seconds. Add lemon zest and mix gently.
  3. Preheat the grill or grill pan to medium-high heat (around 375–400Β°F).
  4. Place peaches cut-side down on the grill. Cook for 3–4 minutes without moving to get grill marks. Flip and grill the skin side for another 2 minutes until tender but not mushy.
  5. Transfer grilled peaches to serving plates, cut side up. Spoon generous dollops of honey ricotta over each half. Sprinkle chopped pistachios on top and drizzle with extra honey. Garnish with fresh mint leaves if using.

Choose firm but ripe peaches to avoid mushiness. Let peaches sit undisturbed on the grill for caramelized marks. Blend ricotta well with honey and lemon zest for a silky texture. Toast pistachios lightly before chopping for enhanced flavor. Grill peaches just before serving to keep them warm and tender. For dairy-free, use coconut or almond ricotta alternatives and swap honey for maple syrup or agave. Nectarines can be used instead of peaches.
