A simple, lazy, yet sophisticated breakfast or brunch dish featuring a block of feta cheese melting into a creamy sauce with burst cherry tomatoes and baked eggs. Ready in under 30 minutes with minimal prep.

  • 2 cups cherry or grape tomatoes
  • 1 block (6 oz) Greek feta cheese
  • 4 to 6 large eggs, room temperature
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil or parsley, chopped (for garnish)
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. Wash and pat dry tomatoes. Place them in a 9×9 inch baking dish or similar casserole dish.
  3. Drizzle with olive oil and toss with minced garlic, dried oregano, red pepper flakes, salt, and pepper until coated.
  4. Place the block of feta cheese on top of the tomato mixture.
  5. Bake for 10 minutes to soften tomatoes and begin melting the feta.
  6. Remove from oven and use a spoon to make small wells in the mixture.
  7. Crack eggs directly into the wells, being careful not to break the yolks.
  8. Return to oven and bake for 8-12 minutes, depending on desired yolk consistency (8 mins for runny, 12 for firmer).
  9. Remove from oven and let rest for 2-3 minutes to allow eggs to set.
  10. Garnish with fresh basil or parsley and serve immediately with crusty bread.

Notes

Use a block of feta rather than pre-crumbled for a better creamy sauce. Room temperature eggs bake more evenly. Do not overbake if you prefer runny yolks. Let the dish rest for 2-3 minutes after baking to allow the eggs to set slightly. Taste feta before adding extra salt as it can be very salty.
