Creamy Acorn Squash Soup with Toasted Pepitas

A velvety, comforting fall soup made by roasting acorn squash until caramelized, then blending it with sautΓ©ed aromatics, vegetable broth, and cream. Topped with crunchy toasted pepitas for texture.

  • 2 medium acorn squash
  • 1 tablespoon olive oil
  • 1/2 cup unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 sprigs fresh thyme
  • 1/2 cup heavy cream
  • 1 teaspoon kosher salt (plus more to taste)
  • 1/2 teaspoon black pepper (plus more to taste)
  • 1/2 cup raw pepitas (pumpkin seeds)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Cut squash in half lengthwise, scoop out seeds, drizzle cut sides with olive oil, and season with salt and pepper. Roast cut-side down for 30-40 minutes until tender. Scoop out flesh.
  2. In a large pot, melt butter over medium heat. Add diced onion and cook until soft and translucent (about 5 minutes). Add garlic and cook for 1 minute until fragrant.
  3. Add roasted squash flesh, vegetable broth, and thyme sprigs to the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  4. Remove thyme sprigs. Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches using a standard blender.
  5. Stir in heavy cream and bring to a gentle simmer. Taste and adjust seasoning with salt and pepper.
  6. In a small skillet, toast pepitas over medium heat for 2-3 minutes until golden and popping. Remove from heat.
  7. Ladle soup into bowls, drizzle with extra cream if desired, and sprinkle generously with toasted pepitas. Serve immediately.

Notes

If the squash is hard to cut, microwave it for 2-3 minutes first to soften the skin. Do not over-blend to avoid a gummy texture. Toast pepitas carefully as they burn quickly. For a dairy-free version, swap butter and cream for coconut oil and coconut milk.
