Creamy 5-Ingredient Chicken Thighs with Sun-Dried Tomatoes

A quick and easy creamy chicken thigh recipe with sun-dried tomatoes and spinach, perfect for cozy weeknight dinners. This dish features a silky sauce and juicy chicken thighs that are sure to please the whole family.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700g)
  • ½ cup sun-dried tomatoes, chopped (oil-packed recommended)
  • 4 cups fresh spinach, loosely packed (about 120g), washed and roughly chopped
  • 1 cup heavy cream (240ml)
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: pinch of red pepper flakes
  • Optional: fresh lemon juice for finishing

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat 1 tablespoon of olive oil over medium-high heat in a large skillet. Place chicken thighs skin-side down and cook without moving for 6-7 minutes until golden brown and crispy.
  3. Flip the chicken and cook the other side for 5 minutes. Remove chicken from the pan and set aside.
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan and stir for 1-2 minutes until fragrant.
  5. Pour in the heavy cream and stir to combine with garlic and tomatoes. Add the spinach and stir until wilted and mixed into the sauce, about 3-5 minutes.
  6. Return the chicken thighs to the pan, nestling them into the creamy sauce. Cover loosely and simmer on low heat for 10-12 minutes until chicken is cooked through (internal temperature 165°F / 74°C) and sauce thickens slightly.
  7. Taste the sauce and adjust salt and pepper as needed. Optionally, add a squeeze of fresh lemon juice.
  8. If the sauce is too thin, remove the chicken and let the sauce simmer uncovered for a few minutes to thicken before serving.

Notes

Pat chicken dry for crispy skin. Do not move chicken while searing to develop a golden crust. Use heavy cream for a silky sauce; lighter dairy options will thin the sauce. Spinach adds freshness and color; frozen spinach can be used if drained well. Optional red pepper flakes add mild heat. Let sauce thicken uncovered if too thin.
