Cozy Sausage & Potato Soup with Kale: Easy 30-Minute Dinner

A quick and comforting soup made with spicy Italian sausage, tender Yukon Gold potatoes, and lacinato kale in a rich, creamy broth. Ready in under 30 minutes, this one-pot meal is perfect for busy weeknights and cozy evenings.

  • 1 lb Italian sausage (casings removed)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1.5 lbs Yukon Gold potatoes, cubed into ½-inch pieces
  • 4 cups chicken broth
  • ½ cup heavy cream
  • 1 bunch lacinato kale, stems removed and leaves chopped
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Brown the sausage: Heat a large Dutch oven over medium-high heat. Add the sausage (casings removed) and break it up with a wooden spoon. Cook undisturbed for 3-4 minutes until browned, then stir and cook until fully cooked and crispy in spots, about 6-8 minutes total. Transfer sausage to a plate with a slotted spoon, leaving rendered fat in the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add diced onion to the pot with the rendered fat (add olive oil if needed). Cook for 4-5 minutes until soft and translucent. Add minced garlic and red pepper flakes, cook for 30 seconds until fragrant.
  3. Deglaze the pot: Pour in about ½ cup of chicken broth and scrape up brown bits from the bottom. Let bubble for about 1 minute until most liquid evaporates.
  4. Add potatoes and broth: Add cubed potatoes, dried thyme, and remaining chicken broth. Stir, bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes until potatoes are fork-tender.
  5. Add kale and cream: Stir in chopped kale and let wilt for about 2 minutes. Pour in heavy cream and stir. Return cooked sausage to the pot. Simmer together for 3-4 minutes.
  6. Season and serve: Taste and add salt and pepper as needed. Ladle into bowls and serve hot.

Notes

For best flavor, brown the sausage well to create caramelized bits. Cut potatoes into even ½-inch cubes for uniform cooking. Taste and adjust salt at the end as sausage saltiness varies. Soup thickens as it sits; add a splash of broth when reheating. Lacinato kale is preferred; if using curly kale, cook an extra minute or two.
