A warm, gooey pumpkin cinnamon roll casserole topped with a silky vanilla bean glaze, perfect for cozy fall mornings and festive brunches.

Ingredients

Scale
  • 1 (12-count) package refrigerated cinnamon rolls with icing
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • 1/4 cup whole milk (or any milk of choice)
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon ground ginger (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup powdered sugar, sifted
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon whole milk (for glaze)
  • 1/2 teaspoon vanilla bean paste (or vanilla extract)

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Unroll or cut the cinnamon rolls into bite-sized pieces and place evenly into the prepared baking dish.
  3. In a medium bowl, whisk together pumpkin puree, eggs, milk, brown sugar, cinnamon, nutmeg, ginger, vanilla extract, and salt until smooth and well combined.
  4. Pour the pumpkin custard evenly over the cinnamon rolls. Gently press the rolls down to soak up the custard. Let sit for 5 minutes.
  5. Bake for 35-40 minutes or until the custard is set and the top is golden brown. Tent with foil if browning too fast.
  6. While baking, combine powdered sugar, melted butter, milk, and vanilla bean paste in a small bowl. Whisk until smooth and creamy, adding milk as needed for drizzle consistency.
  7. Let the casserole cool for 5 minutes after baking, then drizzle the vanilla bean glaze generously over the top and serve.

Notes

Let the pumpkin custard soak into the cinnamon rolls before baking to avoid dry edges. Use room temperature eggs and milk for smooth custard. Tent with foil if top browns too quickly. Add chopped pecans or walnuts before baking for crunch, adjusting bake time accordingly. For dairy-free, substitute milk and butter with plant-based alternatives. Gluten-free cinnamon rolls can be used to make this recipe gluten-free.
