  • 1 cup (150g) fresh or frozen raspberries
  • 1/3 cup (65g) granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (115g) unsalted butter
  • 1 cup (120g) all-purpose flour (or almond flour for gluten-free option)
  • 1/2 cup (100g) light brown sugar, packed
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/2 cup (50g) rolled oats (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, gently toss sliced nectarines and raspberries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Let sit for 10 minutes.
  2. Melt unsalted butter in a medium saucepan over medium heat, stirring constantly until it foams and turns a nutty brown (about 5 minutes). Remove from heat immediately.
  3. In a separate bowl, combine flour, brown sugar, ground cardamom, salt, and rolled oats. Pour warm brown butter over dry ingredients and stir until pea-sized clumps form.
  4. Transfer fruit mixture to an 8×8 inch baking dish, spreading evenly. Sprinkle crumble topping over fruit without pressing down.
  5. Bake for 35-40 minutes until topping is golden brown and fruit is bubbling. If topping browns too fast, loosely cover with foil halfway through baking.
  6. Let crisp cool for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

Use Kerrygold butter for best browning results. Substitute peaches for nectarines if unavailable. For dairy-free, use coconut oil carefully browned. Rolled oats are optional and can be replaced with chopped nuts for extra crunch. Let crisp cool before serving to thicken filling. Tent with foil if topping browns too quickly.
