These individual apple crisp cups offer the comfort of a traditional dessert with the convenience of portion control. Made with simple pantry ingredients, they bake evenly in ramekins for a crispy, buttery topping and tender, spiced apple filling.

Ingredients

Scale
  • 45 medium apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 pinch freshly grated nutmeg
  • 1 teaspoon cornstarch
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon (for topping)
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Lightly grease six to eight individual ramekins or small oven-safe bowls with butter or cooking spray.
  2. In a large mixing bowl, combine sliced apples, lemon juice, granulated sugar, 1 teaspoon cinnamon, nutmeg, and cornstarch. Toss to coat evenly and let sit for 5 minutes.
  3. Divide the apple mixture evenly among the prepared ramekins, pressing down gently. Leave about half an inch of space at the top.
  4. In a separate bowl, whisk together rolled oats, flour, brown sugar, 1 teaspoon cinnamon, and salt.
  5. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter, two forks, or your fingers to work the butter in until the mixture resembles coarse sand with pea-sized clumps.
  6. Sprinkle the topping evenly over the apples in each ramekin and press down lightly to adhere.
  7. Place ramekins on a baking sheet and bake for 25-30 minutes, or until the topping is golden brown and apples are tender.
  8. If the topping browns too quickly, loosely cover with foil for the last 5 minutes.
  9. Let cool for at least 10 minutes before serving to allow juices to thicken.

Notes

Use firm baking apples like Granny Smith or Honeycrisp to prevent mushiness. Keep butter cold for a crumbly topping. Can be stored in the fridge for up to 5 days or frozen for up to 3 months. Reheat in oven to restore crispiness.
