  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Carefully halve and pit 4 ripe peaches.
  3. In a mixing bowl, combine peach halves with 3 tablespoons honey, 1 teaspoon ground cinnamon, 1 teaspoon fresh lemon juice, and a pinch of salt. Add 1 teaspoon vanilla extract if using. Toss gently to coat evenly.
  4. Place peach halves cut side up in a baking dish.
  5. Scatter 2 tablespoons of small butter pieces evenly over the peaches.
  6. Bake for 20 to 25 minutes until peaches are tender but hold their shape and honey bubbles and caramelizes slightly.
