  • 2 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • 1/4 cup cold water
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for garnish)
  • Sour cream or Greek yogurt (optional, for garnish)
  • Tortilla chips or crusty bread (for serving)

Instructions

  1. Melt the butter in a Dutch oven or large pot over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Season the chicken breasts with a pinch of salt and pepper. Place them in the pot and sear for 3-4 minutes per side until golden brown.
  4. Pour in the chicken broth, scraping the bottom of the pot to loosen browned bits.
  5. Add the diced tomatoes (drained), hatch green chiles, cumin, smoked paprika, salt, and pepper. Stir together. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes until chicken is cooked through.
