Instructions

  1. Preheat your oven to 375°F (190°C) and position the rack in the center.
  2. In a medium bowl, combine 4 cups fresh blueberries, 1/2 cup sugar, 2 tablespoons cornstarch, 1 teaspoon lemon juice, and 1/2 teaspoon vanilla extract. Stir gently until the berries are coated evenly. Set aside to macerate for about 10 minutes.
  3. In another bowl, whisk together 1 1/2 cups flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
  4. Add the cold, cubed butter and cut it in using a pastry cutter or two forks until the mixture resembles coarse crumbs with pea-sized bits.
  5. Pour in 3/4 cup cold buttermilk and stir just until the dough comes together. If the dough feels too wet, sprinkle in a bit more flour, a tablespoon at a time.
  6. Pour the blueberry mixture into your baking dish, spreading it out evenly.
  7. Dollop the biscuit dough in generous spoonfuls over the berries, leaving gaps for the fruit to peek through.
  8. Bake for 35-40 minutes, until the biscuit topping is golden and cooked through, and the blueberry filling is bubbly and thick. Tent loosely with foil if biscuits brown too quickly.
  9. Remove from oven and let cool on a wire rack for at least 15 minutes before serving.
