A warm, cheesy breakfast casserole featuring everything bagel seasoning, savory sausage, and a creamy egg base, perfect for cozy weekend mornings or brunch gatherings.

Ingredients

Scale
  • 4–5 everything bagels, cut into 1-inch cubes (fresh or day-old)
  • 12 ounces breakfast sausage (spicy Italian preferred, mild works too)
  • 8 large eggs, room temperature
  • 2 cups milk (whole or 2%; can substitute unsweetened almond milk for dairy-free)
  • 1.5 cups shredded cheddar cheese (sharp cheddar preferred; mozzarella optional)
  • 2 tablespoons everything bagel seasoning (store-bought or homemade blend)
  • Salt to taste (about 1/2 teaspoon)
  • Black pepper to taste (about 1/4 teaspoon, freshly ground)
  • 2 tablespoons butter (for greasing casserole dish)
  • Optional: chopped fresh chives or parsley for garnish

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9×13-inch casserole dish with butter, covering all sides.
  2. Heat a skillet over medium heat and cook the breakfast sausage, breaking it apart, until browned and cooked through (7 to 10 minutes). Drain excess fat and set aside.
  3. Cube the everything bagels into roughly 1-inch pieces while the sausage cooks.
  4. In a large mixing bowl, whisk together eggs, milk, salt, and black pepper until smooth and slightly frothy.
  5. Add bagel cubes, cooked sausage, shredded cheddar cheese, and 1 tablespoon of everything bagel seasoning to the egg mixture. Gently fold to combine without breaking the bagels.
  6. Pour the mixture evenly into the greased casserole dish. Sprinkle the remaining tablespoon of everything bagel seasoning evenly over the top.
  7. Bake for 35 to 40 minutes, until the top is golden brown and a knife inserted near the center comes out clean.
  8. Let the casserole rest for 5 to 10 minutes before serving to set.
  9. Garnish with chopped chives or parsley if desired. Serve warm.
