Cozy Baked Apple Cider Donuts with Cinnamon Sugar

These baked apple cider donuts are tender, moist, and packed with concentrated apple cider flavor. Coated in cinnamon sugar, they’re the perfect fall treat without the guilt of deep-frying.

  • 1 cup apple cider
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk, room temperature
  • ½ cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)
  • 4 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Reduce the apple cider: Pour 1 cup apple cider into a medium saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until reduced to about ¼ cup, about 10-15 minutes. Set aside to cool.
  2. Preheat oven to 350°F (175°C). Grease a donut pan well with butter or cooking spray.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a separate large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  5. Beat in eggs one at a time, then add vanilla extract and cooled reduced apple cider. Mix until just combined.
  6. With mixer on low, add dry ingredients in thirds, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined; do not overmix.
  7. Transfer batter to a piping bag or zip-top bag with corner snipped. Pipe into prepared donut cavities, filling each about ⅔ full.
  8. Bake for 10-12 minutes, until golden brown and a toothpick inserted comes out clean. Cool in pan 2-3 minutes, then transfer to a wire rack.
  9. Mix ½ cup granulated sugar and 2 tablespoons cinnamon in a shallow bowl. Melt 4 tablespoons butter in another bowl.
  10. While donuts are still warm, brush each with melted butter, then dip in cinnamon sugar mixture to coat evenly. Place back on rack to set.

Notes

Reduce the cider properly to concentrate flavor. Use room temperature ingredients for best results. Do not overmix the batter. Coat donuts while still warm for best adherence. Store in an airtight container at room temperature for up to 3 days. Freeze uncoated donuts for up to 3 months.
