  • 3/4 cup (165g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) semi-sweet chocolate chips, tossed in 1 tablespoon flour
  • Optional: 1/2 cup (60g) chopped walnuts or pecans
  • Optional: pinch of sea salt flakes

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper and lightly grease the sides.
  2. In a large mixing bowl, beat together softened butter, granulated sugar, and light brown sugar on medium speed until light and fluffy, about 3-4 minutes.
  3. Add eggs and vanilla extract to the butter mixture and beat on medium until fully combined and smooth.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Toss chocolate chips in 1 tablespoon of flour, then fold them gently into the dough along with nuts if using.
  7. Spread the dough evenly into the prepared pan and smooth the top. Sprinkle a pinch of flaky sea salt on top if desired.
  8. Bake for 25-30 minutes until edges are golden brown and set but the center is still slightly soft.
  9. Let the cookie cake cool in the pan for at least 15 minutes before lifting out by the parchment edges. Transfer to a wire rack to cool completely or serve warm.

Notes

Use room temperature eggs and butter for best texture. Toss chocolate chips in flour before folding to prevent sinking. Avoid overbaking to keep the center chewy. Chilling dough for 15-20 minutes before baking helps control spreading. If edges brown too fast, tent with foil halfway through baking.
