  • 1 package of hot dog or bratwurst sausages
  • 1 dozen hamburger buns or rolls

  • 1 cup mayonnaise or Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 large cucumbers, sliced
  • 1 pint cherry tomatoes
  • 1 bag of baby potatoes
  • Fresh herbs like parsley or dill (optional)
  • 1 large bag of tortilla chips or pretzels
  • Aldi’s salsa or guacamole
  • 1 package of cheese slices or shredded cheese (optional)
  • 1 package of fresh strawberries or seasonal berries
  • Aldi’s pound cake or angel food cake
  • Olive oil for grilling and dressing

Instructions

  1. Take the pre-marinated chicken thighs out of the fridge about 15 minutes before grilling to come to room temperature.
  2. Rinse baby potatoes and place them in a pot of salted water. Bring to a boil and cook for 15-20 minutes until tender. Drain and set aside to cool slightly.
  3. In a large bowl, combine coleslaw mix with mayonnaise or Greek yogurt, apple cider vinegar, sugar, salt, and pepper. Toss gently to coat and chill in the fridge.
  4. Preheat grill to medium-high heat (around 375°F). Grill chicken thighs 6-7 minutes per side until internal temperature reaches 165°F. Grill sausages for 10-12 minutes, turning frequently.
  5. Once potatoes are cool, gently press each potato flat. Brush with olive oil and sprinkle with salt and pepper. Grill for 5 minutes per side until crispy.
  6. Slice cucumbers and halve cherry tomatoes. Toss with olive oil, salt, pepper, and fresh herbs if using. Keep chilled until serving.
  7. Arrange grilled chicken, sausages, smashed potatoes, coleslaw, and fresh veggies on serving platters. Set chips, salsa, and cheese nearby. Keep buns warm in foil on the grill for the last 5 minutes.
  8. Slice pound cake and layer with fresh strawberries and whipped topping if desired. Serve chilled or at room temperature.

Notes

Use a meat thermometer to ensure chicken is cooked to 165°F. Let meat rest 5 minutes after grilling to lock in juices. For dairy-free slaw, substitute mayo with coconut yogurt. Gluten-free buns or lettuce wraps can be used to make the meal gluten-free. Avoid crowding the grill for even cooking and good sear marks. Prepare coleslaw dressing a day ahead for better flavor.
